I'm not sure when I first discovered a unique candy bar made solely in Idaho. I must've been eight years old or so but after my first bite, I was hooked.

If you've never had an "Idaho Spud" before, you are missing out. It occurred to me that a lot of people have never heard of this candy bar and when I go to Yokes to grab one, they are the very last box on the bottom shelf, hidden away from potential greatness.

If you've had one, you know how yummy they are but if you haven't, you need to seek one out ASAP.

If you're curious about what's so great about the "Idaho Spud", you need to take a bite.

An Idaho Spud is a light cocoa flavored, soft marshmallow center drenched with a dark chocolate coating and then sprinkled with coconut.

It resembles the shape of a potato but that's the only connection with "spud".

The company that makes the candy dates back to 1901 and the Idaho Spud is a candy that seems way more popular outside of the state of Idaho than inside the state of Idaho.

The Idaho Candy Company is based in Boise but ships their candy worldwide. I even noticed on their website that they have recipes to make pies and such with the Idaho Spud. I know what I'm going to be doing this weekend!

It's kind of funny how it's become a tradition for me to grab an Idaho Spud in Dayton Washington whenever I go home to the Lewiston/Clarkston Valley. I always seem to grab one as I'm passing through town.

I guess having an Idaho Spud just takes me back to my childhood. If you happen to spot one "in the wild", grab one and try it out - you might like it!
